Cutting Whole Chicken can sound like a daunting task. Here's a quick simple way to have the cuts you desire without spending the extra money. It's easiest if you have two knives, a meat cleaver (or bone cutting knife) and a boning knife (or equivalent). Make sure your working with sharp knives. Start with a whole thawed chicken on the cutting board.
1. Cut legs off at the hip bone.
2. Cut wings off.
3. With the meat cleaner cut the rib cage from the back.
4. Next grab the boning knife, and cut the breast away from the rib cage. Saving as much meat as possible on the breast.
